Au Comptoir à Pâtons sources all of its ingredients directly from local and regional producers that espouse the principles of 'agriculture paysanne' (small-scale, sustainable farming) and often organic farming methods. The quality of their produce is based on their work.
Au Comptoir à Patons builds a relationship based on respect and mutual growth, where the producer sets a price that is honoured by the restaurant.
This special relationship with suppliers means that it remains in full control over the origin and traceability of its raw materials.
It does not use any frozen or processed ingredients; they are all delivered fresh! Around 70% are sourced from organic or biodynamic farms, 80% from local farms, and more than 90% from short supply chains (no more than one intermediary between the producer and the consumer).
The meat is sourced from local, outdoor operations. The restaurant seeks out farms that do not use silage and produce food for their cattle on-site (cereals).
They select spices, exotic produce, chocolates, teas and coffees from fair trade and organic farming supply chains.
The wines are natural, based on a desire to respect the natural expression of the terroir. The grapes are grown using organic farming methods, with no weed killers, pesticides, fertilizers or synthetic products. The harvests are done by hand and vinification is performed to preserve the wine's living character. No technical processes alter the alter the wine's living bacteria, and no chemical products are added, except, if necessary, very small quantities of sulphite.
The juices, beers, waters and fizzy drinks are sourced from local, artisanal and often organic farms.
The establishment undertakes to supply the list of its producers and partners on request.
